Using a mixer, you need to cream your butter and Besti together in a big mixing bowl. You need to beat them together until they get fluffy and the color gets lightening.

Step 2: Beat in other ingredients:

You need to beat in the vanilla extract and then start to add almond flour. You need to pour the almond flour gradually around half a cup at a time.

Step 3: Form:

You can use a cookie scoop to scoop out the gluten-free shortbread cookie dough and then place it onto a parchment paper-lined cookie sheet.

Step 4: Flatten:

You need to flatten each of the dough balls about ½ or 1/3 inch thickness. You need to put a little attention to give an equal size of all the dough balls. If the thickness of all the dough balls is equal then these biscuits will be baked well. Then prick with a fork.

You can use raw cane sugar or coconut sugar. Also, date sugar, brown sugar, or white sugar works well. You can use granulated erythritol for making low-sugar pumpkin biscuits.

If you will bake the biscuits then you need to preheat the oven to 350 degrees Fahrenheit. You need to combine all the dry ingredients in a large bowl and stir well.
