While the traditional biscuits contain 29g of carbohydrates or more, thanks to this low-sugar biscuit recipe. Because you can eat these cookies fearless without having any negative side-effect.

You will intake 4g of carbs per serving. This sugar-free low-carb chocolate chip biscuit recipe only requires 6 main ingredients and quicker preparation.


  • Balanced almond flour
  • Butter
  • Vanilla extract
  • Allulose or Erythritol
  • Egg
  • Blackstrap molasses (this is optional, but you can use it to get a flavor)
  • Sugar-free dark chocolate chips
  • Xanthan gum

Step 1: Cream butter and sweetener together:

This is the first step in making low-sugar chocolate chip biscuits. It is essential for the recipe as it creates air pockets and better texture.

Step 2: you need to make the chocolate biscuit dough:

You need to beat egg, blackstrap molasses, vanilla, and then almond flour just for a while, and then Xanthan gum.

Step 3: Fold in the chocolate chip:

You need to sprinkle the Xanthan gum on it. Do not dump it in. and then beat in. If you do not sprinkle in a thin layer then it can be clumped and may not incorporate into the dough.

You can add some other add-ins like walnuts if you like.

Step 4: make your dough balls and flatten them on a parchment paper line cookie sheet:

These biscuits will spread a little bit not so much. So you need to flatten the cookies just close to the thickness you want the biscuits to be.

About ½ or 1/3 inches is a good thickness. But still, you need to give some space for them to spread.

Step 5: Bake:

Bake the biscuits for 10-12 minutes. You just need to wait patiently to take a bite of the low-sugar chocolate chip biscuits.

  • Wholesome almond flour
  • Butter
  • Sweetener (I use Besti Monk Fruit Allulose Blend, but you can also use any of the granulated sweeteners according to your choice. But the Besti Monk Fruit Allulose yields the best texture and does not dry out the cookies.)
  • Vanilla extract

How to make healthy almond flour shortbread biscuits:

Step1: Cream butter and sweetener:

Using a mixer, you need to cream your butter and Besti together in a big mixing bowl. You need to beat them together until they get fluffy and the color gets lightening.

Step 2: Beat in other ingredients:

You need to beat in the vanilla extract and then start to add almond flour. You need to pour the almond flour gradually around half a cup at a time.

Step 3: Form:

You can use a cookie scoop to scoop out the gluten-free shortbread cookie dough and then place it onto a parchment paper-lined cookie sheet.

Step 4: Flatten:

You need to flatten each of the dough balls about ½ or 1/3 inch thickness. You need to put a little attention to give an equal size of all the dough balls. If the thickness of all the dough balls is equal then these biscuits will be baked well. Then prick with a fork.

Step 5: Bake:

You need to bake these almond flour shortbread biscuits for about 10-12 minutes until they become brown. Cool them before removing them from the pan, as they will be fragile at first.

Now, you can take a bite of the low-sugar almond flour shortbread biscuits. As it contains less sugar, so it will have no adverse effect on your sweet teeth too.

#3. Healthy vegan pumpkin oatmeal biscuits:

Here you can use your regular-size chocolate chips or mini chocolate chips. You can use dark, white, or semi-sweet chocolate chips here.

  • Cinnamon
  • The fat source

You can use almond butter or cashew butter for preparing these healthy cookies. You can also use regular butter.

  • The sweetener

You can use raw cane sugar or coconut sugar. Also, date sugar, brown sugar, or white sugar works well. You can use granulated erythritol for making low-sugar pumpkin biscuits.

How to make low-sugar vegan pumpkin oatmeal cookies:

Step 1:

If you will bake the biscuits then you need to preheat the oven to 350 degrees Fahrenheit. You need to combine all the dry ingredients in a large bowl and stir well.

Step 2:

Soften the nut butter until it is easily stirrable. Then you need to add all the remaining ingredients into the bowl and stir it again to form a biscuit dough batter.

Step 3:

Then flatten the biscuit dough with your hands or using a cookie scoop. Then place the biscuits into a baking tray and flatten it using a fork. Give the shape of biscuits.

Step 4:

Then bake the biscuits on the oven’s center rack for 10-12 minutes. Then you need to remove them from the tray and wait for another 10 minutes to let them cool.

During this time the biscuits will firm up. Take a bite of it and feel the taste. Put the pumpkin biscuits into an airtight container.
